Axel Pauly

Axel Pauly is a bright young winemaker in Germany's Mosel. After learning his trade around Germany and in California and New Zealand, he took over the family estate from his father.

Most of the 10 hectares are in the village of Lieser, in the middle of the Mosel Valley, with a small plot in Bernkastel next door. The label is a bit of fun: turn the drawing of the Mosel hills on its side and you see the noses of Axel, his dad and his grandad.

Lieser's grey and blue slate is cooler than Bernkastel's red slate, so the Rieslings are more mineral. The vines grow on very steep slopes. Axel thins the crop and sorts the grapes, and ferments mostly with wild yeasts. His Rieslings run from crisp and dry to gently sweet, all pure and lively.
