The Joan Sardà winery is in Castellví de la Marca, in the green rolling hills of the Alt Penedès in Catalonia. Local farmer Tomàs Sardà Comellas started it in 1927, bravely leaving the village co-operative to go it alone.

The vines sit up high and feel the breeze off the Mediterranean, so days are warm and nights are cool. That lets the grapes ripen fully while keeping the bright acidity that good sparkling wine needs.
