Caves de Marsigny

Caves de Marsigny is a name used by Caves Bailly-Lapierre, a co-operative near Auxerre in the Yonne, in northern Burgundy. Its main wine is Crémant de Bourgogne, made by the traditional method and aged in large underground cellars near Bailly.

The growers joined forces in 1972 to get their sparkling wine the respect it deserved. Today the co-operative counts 430 growers from 70 families. The cellars are old quarry galleries, first dug in the 12th century, that once provided stone for some of France's great buildings and later grew mushrooms. They spread over 4 hectares, 50 metres down, at a steady 12°C.
