Celler del Roure

Pablo Calatayud started Celler del Roure in 2000, using a handful of tanks and barrels tucked into his father's furniture workshop. He has championed Valencia's own grapes, above all Mandó, ever since.

He belongs to Futuro Viñador, a group of Spanish growers using old vines and local grapes to make wines that speak of their place. In 2006 he bought a seventeenth-century estate in Moixent, 70 miles south-west of Valencia. Its old cellar still had stone lagares and buried clay jars, and he started to use them again.

Winemaker Paco Senis, who also has his own wine bar and restaurant in Valencia, now makes the wines with native yeasts and old clay jars. The 65 hectares of organic vines sit at 600 metres, and cool easterly winds keep the grapes fresh. Expect Mandó, Arcos and Verdil with real freshness.
