David Moret

David Moret is a small négociant working from a little cellar in Beaune. He owns no vines. He started out on his own in the late 1980s, borrowing from the bank to pay for his first barrels and grapes.

He buys small lots from around eight top growers, mostly in Meursault, Puligny-Montrachet and Chassagne-Montrachet. He keeps a close eye on their vineyards, picks the harvest dates himself and buys whole bunches, which go through an optical sorting machine.

His whites are all fermented and aged in lightly toasted Allier oak, resting on fine lees for 12 to 18 months. They have a gentle toasty note, balanced by bright fruit.
