Domaine de l'Enclos
Few new Chablis names have caused as much excitement as Domaine de l'Enclos. Brothers Romain and Damien Bouchard own it, and their family have worked these vines for generations.
When their father's négociant firm was sold in 2015, they kept 39 hectares of vines that came from their mother's side. They also bought a house in the middle of town that the monks of Pontigny once used for their vineyard workers. It is now a modern winery, with a new cellar dug five metres underground and lots of small steel tanks, so each plot can be made on its own.
They are certified organic. Unusually for Chablis, they never add sugar, keeping yields low so the grapes ripen fully instead. Expect bright, fresh village wine and Premier and Grand Crus with real depth.
