Domaine Rolly Gassmann

Domaine Rolly Gassmann, based in Rorschwihr in Alsace, is famous for ageing its wines before release. It makes around 300,000 bottles a year but keeps over two million in its cellars.

Winery at Rorschwihr, Alsace.

Both the Rolly and the Gassmann families go back in Alsace wine to the 17th century, and a marriage brought them together in 1967. Pierre Gassmann is the second generation at the domaine. In 2019 he built a six-level, gravity-fed winery into the hillside, which locals call the cathedral. The local limestone makes wines that need time, which is why they hold them back.

The vines are farmed on organic and biodynamic lines, though not certified. Pierre picks late, and about 70 plots are picked by hand and made separately. Expect lively Riesling, Gewurztraminer and Pinot Gris, often with a touch of sweetness balanced by fresh acidity.
