Domaine Sigalas
Paris Sigalas founded Domaine Sigalas on Santorini in 1991, and it has led the way for the island's wines. Its winery, built in 1998, sits just outside Oia among old, ungrafted vines rooted in volcanic ash.
The estate looks after about 40 hectares, many of the vines over 50 years old, trained into baskets called kouloura to shelter the grapes from fierce Aegean winds. Assyrtiko leads, alongside grapes like Athiri and Mavrotragano. Since 2025 it has belonged to Kir-Yianni, and winemaker Sara Iakovidou carries on Paris's work.
Wild yeasts, cool fermentation and careful use of oak give pure, salty, mineral whites. They also look after the island's future, with ideas like a pilot scheme to reuse grey water.
