Domaine Soupé

Domaine Soupé is a young Chablis domaine run by two brothers, Frédéric and Jean-Michel Soupé. The domaine is new, but the family have owned and farmed vines in Chablis for three generations.

Their grandfather was member number 71 of La Chablisienne, the local cooperative. In 2018 the brothers left it to bottle their own wine. Jean-Michel looks after the 16 hectares, farmed sustainably, including village Chablis and premier cru vines. Frédéric makes the wine.

He uses wild yeasts and stainless steel to keep the fruit fresh and pure, then rests the wines on their fine lees. Expect lively citrus and stone fruit, bright acidity and a salty finish.
