Domaine Vrignaud

Guillaume Vrignaud joined the family domaine in Chablis in 1999. Back then the family sold to the local co-op, but Guillaume talked his father into building a cellar and making their own wine.

It worked. The estate has grown from 12 to 28 hectares, all farmed organically. Most of the wine ferments in steel tanks in a spotless cellar, and since 2005 they have used only wild yeasts, which Guillaume feels bring more fruit and minerality.

His vines grow on three soils: Kimmeridgian, white clay and Portlandian. He picks with great care, aiming for wines that are precise rather than broad. The Premier Crus get time to age before release, and the whole range shows classic Chablis character.
