Dreissigacker

In Rheinhessen, Jochen Dreissigacker looks after 45 hectares of certified organic vines, more than half of them Riesling. He calls organic work the craftsman's route to purity, and he uses biodynamic ideas too.

He believes great wine starts with fewer grapes per vine, so he works to build healthy soils that calm the vines down. In the cellar he uses wild yeasts and keeps his hands off as much as he can.

Every wine except the Auslese is fermented fully dry. Ripe fruit, low yields and good sites mean they never need sugar to balance them. He also makes a pure, supple Pinot Noir, and blends wines from different years, a trick borrowed from Champagne.
