Today he farms almost eight hectares of certified organic vines, spread over Morgon, Régnié, Chiroubles, Lantignié and Beaujolais-Villages. Most of it is granite run through with quartz, which gives the wines their purity and finesse.

Everything is picked by hand. In the cellar Frédéric keeps things simple and uses wild yeasts only. He works with Gamay, often with whole bunches, and he firmly believes Lantignié should be the eleventh Beaujolais cru.
