Gallina de Piel

Gallina de Piel is the wine project of David Seijas, who used to be head sommelier at El Bulli. He wanted to make wines that go with all sorts of food, from the food-loving regions of northern Spain.

David works with local growers in Catalonia, Aragon and Galicia, picking good vineyards planted with native grapes. Think Xarel-lo, Garnacha, Cariñena, Godello and Albariño. The style is all about freshness and elegance rather than weight.

He has also started a project on Tenerife, working with local white grapes grown on volcanic soils.
