Les Hauts de Milly

Les Hauts de Milly is run by husband and wife Didier Defaix and Hélène Jaeger-Defaix. Their vineyards in Chablis and Rully have been in their two families for generations. The winery sits in the little village of Milly, beside the river Serein.

Their Chablis comes from vines on Kimmeridgian soils. It sees no oak and rests on its fine lees before bottling, which gives a creamy feel and that classic flinty, wet-stone smell. They also own almost a quarter of the Côte de Léchet premier cru.

Their Bourgogne Blanc uses bought-in grapes from the Côte d'Auxerre, where chalky clay gives a fresher, racier style. In Rully, Hélène's family vineyard on clay and limestone has been farmed organically since 2009.
