Papet del Mas

Papet del Mas makes Cava in Penedès. Winemaker Josep Maria Suriol comes from a family that has made fine sparkling wine here for generations, and he is a big fan of the local grapes.

The main blend is half Xarel-lo, with Macabeo and Parellada making up the rest. The vines grow sustainably on chalk and clay, and everything is picked by hand into small crates and chilled before pressing. Only the cleanest juice is used.

The second fermentation happens in bottle, in cellars 10 metres underground. The result is a classic, fruity Cava with white flowers, green apple, fine bubbles and fresh acidity.
